I just wanted to post this to anyone having a similar problem.
I am jailbroken on an IP4 with 4.1, and suddenly a while ago, my incoming MMS images started being blank.
It would not include the images inline, and the little "blue arrow" to view them brought up a black image. I usually don't install much via Cydia, so I figured something like BiteSMS messed it up.
It turns out, something gets messed up in a "drafts" and "parts" folder, and you just have to remove them. Via your favorite utility (iFile, SSH, etc), just remove the:
/private/var/mobile/Library/SMS/Draft
/private/var/mobile/Library/SMS/Parts
folders. I had to do it twice (they reappeared broken when someone sent a regular text) and then got someone to send me an MMS to get the images and attachments working again.
The "Parts" folder is a cached directory full of your existing MMS data, which once your MMS is working again you can restore, so back it up and overwrite it later if this is something you care about.
Although I just dealt with it for almost 3 weeks (I don't get many MMS), I could have restored and such, but that is always such a pain, and once I figured this out, it worked great.
