I have an M1 Pro MacBook Pro and am trying to play Black Mesa via Whisky/Game Porting Toolkit.

It launches and runs, and at some parts of the game are actually very smooth, but it's more often than not quite laggy. It's listed as supported on Apple Silicon on the GPT wiki and I've adjusted lots of the graphics settings to be lower to try to improve performance but it's just not improving things.

EDIT: I can't even see the menu UI without the -oldgameui flag

Any suggestions?

It's apparently the same in Crossover which uses GPTK 1.1 but in macOS Sequoia with GPTK 2 it runs "perfectly".
