Hello, I am trying to figure out a way to block a list of specific websites through my Airport Extreme router. What would be the step-by-step process for this? I have the 10.5 OS. Thank you for any assistance you can give me!

Can't do it with the router alone.

If you use OpenDNS you could.

So, I've updated my router with the OpenDNS nameservers and restarted my computer, but it still refuses to enable OpenDNS. Am I missing something?

What do you mean refuses to? You should be going through OpenDNS's namesevers if you get your DNS from your router.
