When I block a phone number, and if that number calls me, does it go straight to my voicemail, just as if I were on Airplane Mode?

I want a specific number to go straight to voicemail, so that when that number calls, they will basically believe I'm on Airplane Mode.

If you block a phone number, you won't know at all if they called, and they will be sent straight to voicemail as if the phone is off. However, the iPhone will also hide the voicemails from them as well, and you have to manually get to it if you want to hear it (press and hold 1 on the iPhone keypad and get to VMs the old fashioned way)

I believe you can still see the voicemail but you won't receive a notification, at least according to Apple:

"When you block a phone number or contact, they can still leave a voicemail, but you won't get a notification. Messages that are sent or received won't be delivered. Also, the contact won't get a notification that the call or message was blocked. When you block an email address from Mail, it goes to the trash folder. Email blocking works across all your Apple devices."
