Looks like there is another 'feature' of the watch software that means that any emails which are written with blue text are not converted to white text. (Black text is automatically converted to white).
Therefore, the text is blue on a black background which is not easy to read.
The problem is that Microsoft Outlook defaults to blue text when replying to emails.
Apple Support confirmed this is currently the case and to raise a suggestion through apple.com/feedback
