I've repeatedly trashed the Bluetooth icon from the menubar, but it continues to reappear. Not immediately though; I'll leave my iMac (and the Magic Mouse and wireless keyboard) idle for the day, and when I come back, my unwanted Bluetooth icon sits waiting for me.

Edit: I feel like this is in the wrong section now--even though it may be about peripherals. Please forgive me!

Hold the Command key and drag it off.

In System Preferences > Bluetooth:

Uncheck "Show Bluetooth status in menu bar"

I did uncheck the option in the Bluetooth pref. pane, but the icon has again reappeared in the menubar. Perhaps after my computer comes back from idle, it tries to reconnect to my mouse and keyboard and causes the icon to reappear?
