They do indeed. I have a Sony Ericsson HBH-662 and it works fine with Skype. Just pair it and you should be able to configure your input/output audio device in Skype to "Bluetooth Audio".

My jabra bluetooth headset workes fine with my Mac, I haven't tested it on Skype but I am sure it will work.
