Bluetooth and Bootcamp pairing seems to be hit or miss. For example, my Logitech MX535 Bluetooth mouse is perfectly happy on my MacBook Air to work seamlessly across Windows and MacOS. But on my 16" MacBook Pro, I have to re-pair the device every time I change OS. My Logitech K480 keyboard, however, is perfectly happy to work on my 16" MBP in Windows or MacOS without going through gyrations every reboot.

This situation is very weird, and I don't know what the root cause is. But I guess the TL;DR is:

Does anyone know of a Bluetooth mouse that will consistently stay paired whether I'm in Windows or MacOS?
 
I’m firm believer that the Blu-Tooth chip in that mouse is an older one that’s in your newer Mac! Over the years I have noticed that different versions don’t seem to play so nice with a newer chip in newer device, even Windows users and Linux been trying a fix for this over the years!
 
I'm a fellow sufferer as all my BT accessories that work fine in the MacOS, are struggling to connect in Bootcamp with Windows 10, including magic trackpad 2 and magic keyboard 2. I end up using a wireless mouse.

I believe the main problem is the current BT drives for the Bootcamp Windows. I've checked a number of tutorials that suggested rolling back the drivers to an earlier version but that didn't make the trick for me.
