I have two NVMe drive in a PC, I'd like to move them to my Mac Pro.

I'd like to know if its still possible to just press Option at boot to select the drive to boot from? Do that and then select the Windows boot drive to get going?

Or do I have to disable some security to allow that?

Also any recommendation regarding which NVMe PCI card to put in? I can easily get the HighPoint SSD7101A (https://highpoint-tech.com/USA_new/series-ssd7101a-1-overview.htm), or there's those super cheap PCIe adapters on Amazon (https://www.amazon.com/dp/B07JJTVGZM/ref=psdc_3015401011_t1_B07JKH5VTL), but I'm not sure whether they'd work in the Mac Pro.

Also I'd prefer to find at least 2 slots (x8 / x16) adapters. But super cheap adapters are nice, I dont need the PCI slots just yet, so I dont mind using two if I have to...
