What good is it to use a bootable installer for MacOS and not just double click the installer file?
 
So they can only be helpfull when the computer is not working?

Bootable installers are useful to boot via alternatves to restore MacOS when no other methods is available..

Always handy to have, since USB drives are cheap now-a-days.. This would particularly be true even more now thanks to Apple's M1 elimination of Internet Recovery.
