I am installing, well trying, to install Win 7 on my iMac with Boot camp, but when I get to the Win 7 language selection my keyboards or mouse don't work so I can't move forward...

any ideas?? I'm using a USB Mouse and Apple Bluetooth Keyboard.

This is likely because Windows 7 doesn't contain drivers for the USB 3.0 ports the iMac uses. How are you installing Windows - USB flash or external DVD?

How did you create the bootable image? If it was in OS X with Boot Camp Assistant, did you leave the box checked to download the Windows Support Software?

I checked every box.. or at least I am sure I did. I'm re downloading the Windows Support thing right now. Would this allow my bluetooth to work DURING the install?

Also, how would this help when it says install this after?
