Bought a new MBP 2017 15" with a 512gb ssd. I have a few games that I'd like to play (rarely), and need to install. I tried it once already with 120gb size, and one game (Infinite Warfare) told me I didn't have the 70gb needed to install. I was like are you kidding me! So, what is everyones recommendation that I do for size of the partition or should I use an external drive for Steam and games? Would the external drive cause any issues if it's not connected while using the laptop till I need it for the games?

You might be able to make Bootcamp run on an external drive, but it's not supported and I imagine you do risk some unwanted consequences if you manage to get it running.
A second possibility would be to run a smallish Bootcamp partition, and install Steam and its games to an external drive.
The last option would be an even larger Bootcamp partition than the one you already used. It wouldn't surprise me if a fully updated Windows install would approach 40 GB in size - it definitely will get there in a while, the way Windows Updates still work, so you don't have to add a lot to make 120 GB feel cramped when you attempt to install a 70 GB game...
