Mac mini 2018 running 11.2. (and now today I tried 11.2.1 hoping it would fix the problem - it didn't).

The Bootcamp Windows disk is still selectable in Startup Disk under System Preferences.

But Windows no longer starts up. After some delay, my Mini starts up in Big Sur instead.

Holding down the Option key at startup no longer shows me the Bootcamp Windows disk as an option.

Yesterday, Feb 17th, there were no issues. I didn't install any new software or hardware, or change any settings.

But now I can no longer startup in Windows.
 
The Bootcamp Disk in no longer mounting automatically. It can only mount manually using Disk Utility.

Here is what is shown in the Windows Boot folder:
