So long story short, it is near impossible to use bootcamp with a usb thumb drive on a mac mini that has a disc drive, due to the way the apple bootmanager is configured. Although as I only have a windows 7 home premium key, I don't know what to do. You can no longer download windows 7 iso files from Microsoft, I need someone to recommend me a windows 7 installation disc that can be bought from the likes of ebay.

Have you tried entering the product key here and downloading the Windows 7 ISO? Failing that, you can just pick up an ISO from loads of places, doesn't really matter where you get it -- it's only the licence key that validates it as genuine after all, not the DVD.
 
Someone said recently that an update is coming from Microsoft that will allow you to use Windows 7/8 license keys to clean install Windows 10.
Maybe wait a month or so.
