Booting from Snow Leopard disc? AND checking cycles on HD

I should be recieving my new hard drive in about an hour. I'm wondering if I can replace my 120GB HD with the 320GB and then just boot off of the Snow Leopard disc?

Also, since the drive that I bought seems to have some problems with the OS X battery saving feature, it apparently writes the drive or does some cycle stuff like thousands of times a day. This means that it will die quicker. Can anyone tell me how to check the amount of cycles I've used?
