Bought a new 27" What is the upgrade procedure from old iMac?

My Dad has an old 2007 white iMac 17" and we just put in an order for a new 27" with a 1TB Fusion drive. When I go to set this up for him, what is the procedure for getting all of his information off of the old iMac and onto the new one? This is the first time we are purchasing a new mac to replace an old mac. I have heard that the new mac will ask if I am upgrading from an old mac and then to insert a USB cable from one into the other... Is that true? Also, if it is, what information will be transferred? Music? Documents? Email? Contacts?

This is what you need. Just take you time. I did this for my sister and it went smoothly and I'm no computer whiz. Good luck.
