Hi,

I was wondering if I'm alone having this issue.

I've disabled the following options:
- Automatically adjust brightness
- Slightly dim the display on battery

Yet, the brightness still self adjusts and as soon as I unplug my MBP, the screen dims a bit.

I've recently upgraded to Sequoia 15.6.1 and I had not this issue on Monterey.

My M3 MacBook Air isn't having those issues using the same settings.

See if a new, test User Account has the same results.
I made a clean install of Sequoia just a few days ago. So, the account is pretty "new".
 
Make a new account, just to test for your issue. Then, try the test account by logging out of your normal account, as you have to then log in to your newly-made account to check for differences.
The reason is that screen brightness is controlled by the user, and a possible problem with the screen brightness may be introduced by the user. Having another user account to log in should help in troubleshooting your issue.
(It's also possible that you might have introduced the issue when using whatever apps you might have installed, so, I suggest that you don't try any apps when logged into the "new" user, just check out the system display settings, then try your typical apps only if that is necessary to try to duplicate your brightness issue.
