Just looking for a way to switch the ditionary over from US English mode to British English mode.

I'm tried of spell check constantly telling me that my spelling is wrong because I've used an "s" instead of a "z", or I've put a "u" in a word like "colour."

 -> System Preferences -> International -> Language -> Edit List. Enable British English, and click OK. Re-order the languages to taste.

I looked in the preferences, but missed the "Edit List" button.

I missed that one for about 3 years too. But I'm now happily using Mac OS X in Canadian English, eh?
