Although the Mac App Store build number is build 11A511 (though some people claim they have 11A494), there are more signs of a 11A494 being on my computer rather than 11A511 as listed in About this Mac. For example, if you look at the package contents of Launchpad, Mission Control or any Apple app that's included with the OS (apart from iLife and iTunes - they don't list a OS build no.) and open up the info.plist file, then you will see that the Build OS is claimed to be 11A494.

No, your computer has build 11A511 on it. Those apps were compiled under an earlier OS build and not recompiled. What's the mystery?
