A few years back, I bought a MacBook and got a free iPod during an education store promo. I think it was February and they were getting rid of normal iPods. Well, we're in the market for an iMac and I'm trying to figure out if I can squeeze a free iPod Touch into the deal if I wait a short time. Any ideas what time of year they normally run that promotion?

Yes, the Back to School promotion. In the US and Canada it usually begins in June or early July, and carries through to mid-September.
 
You're better off getting a refurb mac and spending the savings on an ipod - that will let you pick your model (ed store deal has usually applied to one or two models). With refurb 4th gen nanos currently at $99 you can't lose.

The ed store I've always had access to a rebate, so long as you choose between pretty much all iPods except shuffle.
