Buy @ Store but Open at Home?

When I bought my last iPhone (from an AT&T store), the rep opened up my iPhone box and inserted the SIM & made sure it worked.

Can I just go to an Apple Store/AT&T store, and buy the iPhone then, walk out with my new SIM card & sealed iPhone and do all that myself?

That blows . I don't get why you can have it mailed to your house sealed but you can't walk out of the store that way.

When I got my iPhone 4 at Apple, they were about to open it and set it up but I told them no thanks, I'll do it at home. Got in my car, got home and opened it up nice and fresh.
