The 2011 MBPs support S-ATA 6-0 Gbps (III) in the HDD slot and some are confirmed to also have it available in the ODD slot.

The 15" model reportedly has problems with the 6 Gbps link in the optibay.
You should, however, be able to use an SATA III drive in the main HDD bay without concern. The newest drives are actually able to saturate an SATA II connection during sequential writes so it's worth it to go with an SATA III drive in any computer that supports it (especially as there isn't much difference in price).
