My company owns my Verizon account and pays my monthly service. Employees are allowed to buy their own devices. If I wanted to upgrade to an 8, would it be as simple as:
  • Buy sim-free unlocked iPhone 8 from Apple Store
  • Take the Verizon sim out of my current iPhone
  • Install the Verizon sim into the new sim-free iPhone 8
  • Profit???
Is that all there is to it? Or do I have to have someone (Verizon or IT employee at my company) do an "activation"?

Last question. If down the road I got another phone but wanted to hand this one down to a family member who is on AT&T, would the phone work just fine on AT&T? Would there be any downsides or limited functionality?

Yes, it's that simple. No activation fee or process involved.
