I'm buying a Penryn MBP off of a friend who's looking it to sell it to me for a good price.. he received it as a gift, and he would rather be liquid at the moment.

How would I receive warranty coverage (first year manufacturer) without the receipt? He received it as a gift and doesn't have the receipt for me.. which may not go well under the manufacturer's warranty (experiences with Sony have taught me to always keep one handy).

Also, would I be able to buy AppleCare in the event that I want to secure my investment?

You are fine. You don't need to keep the reciept since Apple does all their warranty service via the serial number. Even with Apple Care. Once you buy that it will be tied to your serial number and Apple Care number.
