I'm a little puzzled by this. Last night I inputted this event into my calendar via my ipad (ios 6).

This morning I got ios8 and I just synced my calendars. As you can see, the event is from 7-10 (which is exactly what I put in), but then it added the 11 PM (GMT) after it.

It's weird because when I click on Edit event, it actually lists the event as 11PM-2AM GMT. But from my first screenshot, the actual event appears at 7-10 Eastern Time.

Can someone help me to diagnose where the issue is?

Check Settings> Mail, Contacts and Calendars -Calendar section Time Zone Overide to see if it's toggled on or off. If on toggle off. If not, do you use google calendar, icloud or both?
