I haven't played it on the mac, but it is an amazing console game. It is my 2nd favorite shooter/action game behind Metal Gear Online.

I know the minimum system requirements call for a Intel Core 2 Duo but will the game run at all on a GEN 1 Macbook Pro (1.87GHz Intel Core Duo with 2GB Ram)?

I think you'll find that is not the demo at all. It's an update for the full retail version.
