I do phone volunteer work for several national charitable organizations.

I'd like to use my iPhone to make those calls - but wish to remain anonymous to those I'm calling.

Does my iPhone automatically identify me when making outgoing calls?

Settings > General > About > Name: Steve Smith
Will Steve Smith automatically show up on the recipients caller ID ?

But even if you did leave your caller ID to ON its not the name of your iphone that you have setup at general/about/name that would show up. That's just the name of your device that you can setup and change at any time.
If your caller ID is set to ON they will see the account holders name on their caller ID if their service supports name along with phone number.

I am the account holder ...
I got it / I turned it to OFF / thanks - good information.

Now that I've prevented the "account holders" name from appearing ...
Will my cell's phone "number" show up in their caller ID ?
 
well there is more than one way to skin a cat!!

you can to go to the at&t website to change this. I do it all of the time. the previous suggestions just show the number. it will show up blocked or unknown to the person you are calling. if you want to you can go to att.com and change it from Steve Smith to the North Pole if you want to. I do that for my business. it shows up as Cell Tech even though the phone is in my personal name. something else you can do is get a google voice number. they are free and they ring to your iphone if you want. or even your house or office. but when you make a call from the google voice app that number will show up. not sure about what name will show because at the moment I dont know anyone who has a landline with caller id any more!
