I don't remember why, but when I initially set up my 11, I picked most compatible, most likely as it's easier to share with others.

High efficiency takes care of everything and is required for certain modes like slo mo and 4K60 never had issues with the actual quality so I just leave it on

There was a thread not long ago about a user bashing High Efficiency format but turns out it is indeed better. HEIF/HEVC is better than JPEG.

I don't care about ultimate quality or slimming down file size a tad. JPEG forever. Jpeg will open in any computer running any OS and any old app.
The benefits of HEIF don't outweigh its drawbacks (in my book)

I use high efficiency since most people that see my pictures are viewing them on their phones which would support it. I try to get the 128GB phones which are plenty of space but still like to have more overhead than I need so I don’t have to worry.

128gb to me is totally not enough. I am using 256gb iPhone X. I hope this year apple will have 1TB iPhone which I will definitely buy it.

If i was living in a country with fast internet 128GB would be enough for me as i will be using iCloud/Google Drive. Using Cloud in Indonesia is a nightmare.

Not really only due to whether u can use cloud storage.
The storage size of ur iPhone will limit how long the 4K video u can take with ur iPhone at one time. This can be a bummer for those who likes to take videos.

High efficiency. It automatically gets converted to JPG when needed anyway (emails, uploads, etc).

Now that we've switched the PCs Windows 10 though, I don't think I have a current device that doesn't support HEIC.

Ah now that makes sense :D thanks for the heads up.

I don’t download many apps or games. I take some pictures and videos but usually shoot in 1080 because myself and the people I send content to view on the phone. And I stream all my music since I’m full time wfh. 128 is more than enough for me but just in case, I like to use high efficiency. Once I’m back in the office I’ll download music and that’s a whole different story

This. I set high efficiency on my Android phones when possible. It saves storage and allows more advance meta data. With the phone automatically converts it to JPEG when needed, there’s really no reason not to use high efficiency.

I always take photos or videos in the maximum resolution i can. as it is easier to downsize ur original video files to smaller sizes if you need to. however, it is not possible to upsale the videos to 4k for example.

a 4k 60fps video took using my iphone x takes up 12GB for a length of close to 32 mins video.
this is the reason i will always buy the largest possible size of iphone just in case i really need to take super long video next time.
