I can't figure out how to reliably get the camera zoom to zoom when I'm taking photos. I know double-tapping the screen brings up the focusing square, but I need the zoom.

Try touching the screen with two fingers, instead of one.

Pinch to zoom

if you are on IOS5, you have to pinch to zoom
(like in the photo album or in safari or something)

Not always. Once you begin to pinch to zoom, you can use the zoom bar.
