Do some iPhones go on sale in Apple Stores right after the event or it's not until the official release which is 1-2 weeks after?

Because I always thought that people start camping just like a week before the announced date of release, but they have started already... do they actually wait in line for ~3 weeks?

They wait until the launch, not the announcement. Mostly they do it for publicity and money.

That place you're reading about is the 5th Avenue store in NYC, which is Apple's flagship store in that region. It's notorious for people lining up for 2+ weeks for new hardware releases.

Most Apple stores will have a camp out line that starts the afternoon/evening before the actual launch. The store I'll be camping at is like that.

They are, but they won't get a phone any sooner! It's usually publicity for there company. Often they sell their place in the line on the last day.

As for Does Size Matter, I have no idea what you are talking about, (but this https://forums.macrumors.com/showthread.php?goto=newpost&t=1771422 thread might give you some clues!). :)
 
That's like attention whore to the max.
The phone doesn't come out for another 2 weeks and you're already lining up?
That's somewhat dumb, IMO.
