I have a 17 inch 2011 macbook pro that I'd like to run with a Seiki 4k tv/monitor. Does anyone have this setup? Or know if it would work?

I see people running their retinas, minis, and pros, but haven't heard anyone using the older macbook models.

It would run maximum resolution 2560 x 1600
So it wont use full resolution of that 4k tv.

Your 2011 MBP has a Thunderbolt port, which has a Display Port 1.1a built in. You should be able to use a miniDP to HDMI 1.4 adapter for a 4k@24Hz resolution. I'm not sure about this, but it should work in theory.

I think it limited to WQXGA. And everymac says: "The maximum resolution supported on an external display is 2560x1600" too.
