Lots of laptops now only come with a couple of USB-C ports - say you wanted to hook up a monitor, keyboard and mouse all at the same time, is that possible? Can adapters work 2 USB devices off one USB-C port?

Easiest option would be a simple USB "dock" device - USB-C connection to the computer, and then it'll usually break out into several USB type-a ports, some variation of DP, HDMI or VGA, some have ethernet etc.

You can use a hub or dock.
BUT...
I would suggest a POWERED hub if you get one.
Each USBc port has "a limit" on the amount of "bus power" it can supply.
Exceed the limit, and the port will "cut out" on you (the Mac will disable it due to overload).

A powered hub as in you'd have to plug it into a wall socket?
Yes.

It depends what you want to use it for obviously but even seemingly small things can trip up macOS' USB power output system and it'll just shut down the port.

If you're only plugging powered items into it (i.e. perhaps a printer, or a desktop external HDD, the monitor etc), then one without AC power should be ok.
