I’ve been doing so reading and it seems that it can’t be done but before I consider a new iPad, I thought I’d ask. I have an old iPad Pro 10.5 (2017). It won’t update to 18 due to its age. I have an app that want me to update to 18. Is there any way to upgrade to 18? Or, is there maybe any way to stop the app from asking me to update every time I use it? BTW, it pops up and asks to update several times while using the app, making the outdated app basically useless, though it does still run.

I have iPad Pro 10.5 (2017) as well that is on iPadOS 17.7.10.
It's only getting security updates now, there is no way to update to iOS 18 or later.

Try finding a similar app that doesn't require iPadOS 18.
For apps that you already own, it will download the last version compatible with iOS 17 if that app ever supported iOS 17.
For apps you don't own and which require iOS 18, you can get the app on a newer device running iOS 18 and then it will be possible to download the app on your iPad Pro 2017, if that app has an older version compatible with iPadOS 17.

Thanks. It’s the NYT’s app that I use to play their games (Wordle and crosswords). The app on my iPad does work, the problem is that it continually brings up a window telling me I need to update the app. I’ve gone to just using the web version, which works, but it did make me wonder about other options. I’ll try the trick of loading it on my phone (iphone17) and see what happens.
