My friend can flip his screens around and switch them so that a blank screen can appear or a screen where he is working on something else is displayed. In other words, he can hide and re-appear screens with different applications open. Does anyone know how to do this or what programs are needed?

Why not ask your friend how he does it? :confused:
 
What you're describing sounds like Exposé. Open a few different applications, and try F9, F10, and F11.

Of course, that seems a little too easy, and your phrase that he can hide and re-appear screens with different applications open does hint at something Spaces-like, maybe the above-mentioned virtuedesktops
