Is there any way I can update to the latest iOS and then jailbreak that? Can someone tell me the easiest steps?

Restore to 6.1, a jailbreak will be out very soon

Connect to computer, open iTunes, backup (or if you can't ,hopefully you've backed up recently), restore your iPad, then restore from backup if you have one.

Jailbreak for 6.1 will be out soon.
