Ideally, we'd each be able to manage her watch from our own iPhones using Family Setup - is that possible or is only one parent/device allowed to manage?

In case it's relevant, my wife is a Parent in Family Sharing and I'm the Organizer

Whilst you can pair multiple watches to one iPhone you unfortunately cannot pair an Apple Watch to more than one iPhone.
