I forget if there’s a name for it, but like i just got a new Apple Watch and held it close to my phone and it asked if i wanted to activate it and i just click connect. Will that be the case for getting a new iPhone? Could i just hold it up to my ipad or something and have this same pairing process?

No not a pairing process like your watch but your iPad and other iOS 11 devices like an existing iPhone can be used to perform what is know as an "Automatic Setup". This allows your new iOS 11 or later new device to capture the Wi-Fi information and iCloud information to do a restore of your iCloud backup or iCloud contents to this new device.
