iPhone 15 Pro Can I backup my phone to my computer and add things back after I’ve set up the new phone?

I’d really like to set up my new phone as a brand new iPhone when I pick it up today.

Is there a way to backup my current phone to my MacBook and then add my backed up texts, contacts, and photos later?

This would help me shift through contacts I don’t even talk with now and pointless screenshots.

The only way I could see you doing this is with iMazing I think. Certainly not using normal Apple backup/restore as that's all or nothing AFAIK.
