Basically, for movie files, I would like the little thumbnail preview that Finder shows me to be a frame from the movie file that I choose. For example, the beginning of many files looks the same, and I would like to be able to change it so that I can identify just from the thumbnail alone what file I am looking at.

Much like in iPhoto, where I can pick what photo is the album cover...
 
i dont think this can be done in Finder. though if you import the movies into iTunes you can choose the poster frame. think of iTunes as Windows Media Player just import your movies in there. its much better for movies than Finder is.
 
I would also like to know this...

Not all porn starts with a shot of the girl.. it's hard to find the right movie based on the file names alone when the names are "Bang_Bros_0040_05_sm.wmv"

haha! random!? well you could select the clip, press space bar to 'Quick Look' then quickly scan forward in the clip. not an instant preview but quick enough/\.
 
Hmm.. the importing into iTunes thing may work.

I take it any changes would be reflected in Front Row too?
