I've bought a Pinnacle to import movies from my widescreen camcorder and widescreen PVR - but I didn't realise that the Pinnacle is actually really very rubbish.

It's importing them in 4:3 so they're all squished, and there's no options whatsoever to change it.

Can I pull them out to 16:9 afterwards?

It sounds like you are importing your movies in DVD resolution. At 720 x 480, DVD pixels are non-square.
 
I believe you can stretch your movies out right in Handbrake using advanced settings.
 
Handbrake was updated recently and it can convert almost any video file or DVD now. I just used it yesterday to convert Animal House and (old) Casino Royale letterboxed fullscreen DVD rips that I'd ripped in 4x3 years ago.
