Probably, but why? All it takes is a click on the Dock to launch an app.

I just got a Mac mini running plex and both would just like to use the Apple wireless keyboard to start and drive plex without having to use my magic trackpad.

System Preferences > Keyboard > Keyboard Shortcuts > '+' symbol

Fill in the blanks and you're done.

I have the same setup, with the mini connected via HDMI to my HDTV. Using your keyboard, all you have to do is Command-spacebar, type Plex.app and press Enter. You should be able to write a script and add a keyboard shortcut to do the same, if you like, but that method is simple and works every time for me.

Loving my Mac mini as my media center running plex with a 2tb external hard drive. So done with the ps3 being my media center.
