This is more of an iTunes question than an iPhone question but figured someone here may know.

So my iTunes account has several machines associated with it and I need to somehow de authorize a few of them as they are from old PC's now broken down as well as an old iMac which I have now sold.

You get a chance to deauthorize all when you hit your 5 machine limit, then you just re enable on the machines you actually use.
 
Sign in on a new machine, and there's an option in the iTunes store to deactivate all.

You can only do this once a year, but a quick email to AppleCare sorts that out (I generally have to 2-3 times a year).
