ok...
i really want to jailbreak my ipod touch but im scared of bricking it. I know its pretty rare for touchs to be bricked and i know how to restore it and all. my real question is: After I install appsnap from jailbreakme.com, can i delete the installer app from my touch without restoring it?

I think that you can, not sure how but Im guessing via SFTP or MobileFinder but I can't really see why you would want to remove it, it's the main and easiest way to download third party apps which, isn't that one of the main points of jalibreaking?
I would keep it
 
no, you can't, but why would you need to uninstall installer? If you just don't want to see the icon, use customize to hide it. If you want to completly remove installer, then you'll have to restore.

if I would restore my ipod touch would all the songs and videos be deleted.
 
yes you may delete the installer.app program from your touch via mobilefinder or any way you want to access the file system.

yes all of the music / video content will be erased from the touch, but it's just one itunes sync away from being there again.
