Can I delete update and download it later if interested

When looking in Settings->General->Usage, I see the iOS 8.0 update says it's taking up 3.6 GB. Deleting the update is an option. If I delete it, can I re-download it later if I want to install it?

Yes, you can download it (whatever the latest version is at at that time) later on if/when you want to.

The update is free. You can download it as many times as you want.
