My Time Capsule is currently erasing via a 7-pass zero-out. It's expected to take 24 hours. Can I take my Air out without interrupting this process, or must my Mac be on and connected to the TC during this entire process?

Why are you doing a 7 pass erase? 1 pass is more than enough to wipe the information.
 
If you are doing it via disk utility or some other program, then you can't disconnect it.
 
I think a 7 pass wipe is excessive for the TC and since you're doing it via the airport utility, I'd not disconnect it. What I would do is cancel the operation and start over with a simple erasure.
