I want to get my mother a new Apple Watch as a gift to replace her old Apple Watch. Can I tell the Apple Store that I will be trading in an older Apple Watch (i.e., hers — one that I don’t personally own) when I buy the new one, or do I have to actually own the old item (which would be in their records) in order to initiate a trade-in.

I don't believe you have to personally own it, but I'm almost certain they require the serial number to be entered online when you initiate the process.
