I'm eager to try the new beta, but I don't want to lose my jailbreak if I can only go back to 7.1.1. Sorry if this was asked before, couldn't find it in the searching I did.
 
No, you can only restore to the currently signed firmware. That is 7.1.1 and 8b1 if you're a developer only.
 
I guess you can't do that thing anymore where you saved your blobs w/ Cydia and used those to restore?

EDIT: TinyUmbrella did that too, iirc.

Nope. The only thing you can do is downgrade back to 7.1.1

i don't have a jailbreak and don't want one. I do want to downgrade from iOS 8 to 7.1.1

I tried the normal restore approach and it failed. I also tried DFU mode restore and that failed.

Can you really downgrade to 7.1.1 and if so, how?

what error are you getting? and yes, you can downgrade to iOS 7.1.1

I don't recall the exact text now, but something like "the device is not eligible for the build."

my iPad air is a model A1475 and I used this ipsw.

iPad4,2_7.1_11D167_Restore.ipsw

EDIT: solved it. that ipsw is iOS 7.1 and it mattered. But this was the only link at developer.apple.com. Instead I downloaded iPad4,2_7.1.1_11D201_Restore.ipsw and now the restore is... well... restoring :)
