I think Big Sure has crippled these new 16 inch Macs. I get the weird stutters in apple like messages with delayed typing and even missed letters. Listening to Soundcloud increases temperature. I dont care for Big Sur. its uglier in my opinion. Notes is uglier and basic looking too. Can I go back and am I losing anything worthy if I do go back to Catalina? I feel Apple screwed me in the butt without any lubrication and left me with an STD for life.
 
Sure you can! You'll have to wipe and do clean install using external bootable drive!
 
Yes, although I believe you have to manually downgrade the firmware separately.

What kind of backups do you have? Do you by chance have a clone from when you had Catalina?
 
Be careful, I have read of similar scenarios of T2 equipped computers, if you wipe the entire drive you will loose the T2 security settings which will default to not allowing booting from an external drive. Do your research on how to downgrade from Big Sur to Catalina with a Intel Mac with a T2 chip.

I have not done what you are trying to do, so you need look for downgrade articles.
 
As a "film industry professional", one must NEVER "upgrade" an OS until one has thoroughly tested it first (using an external drive or some other means).

That way, you know what you're getting into BEFORE you "commit yourself".

Same rule for audio production folks (even MORE important for them, as hardware will often "break" with a new OS).

Having said that...
It should be possible to back up your data and apps, and then boot to internet recovery and erase the entire drive and start over with Catalina.

Try using this special key combination in internet recovery:
Command shift option R
That should open the pathway to re-installing the original OS that shipped with the MBP 16"...

Am I the only one who feels ive been screwed by Apple with an OS upgrade?

OS upgrades can be frustrating. Going forward, I recommend consideration of installing the OS on an external drive before doing a full in-place upgrade (where you can test it before committing), and it is also very beneficial to have a carbon clone of the hard drive made immediately before doing an in-place OS upgrade.
