I haven't purchased my mac yet but I have a question about mac mail. On my Windows PC I have one email address on MS Outlook and three different ones on MS Outlook Express. Outlook Express is easy to change accounts so that is why I use it for multiple accounts.

Can I use multiple accounts/addresses on mac mail? If so, how do you do it and how do you change between addresses?

Yes...

You set up the accounts in Mail > Preferences > Accounts

Each new mail has an account drop-down menu. In addition, you can set the preferences to change the addy that the menu defaults to (so it will always start with example@mac.com, but then you can change it to your other email addys: example@gmail.com or example@hotmail.com).

You'd go to Mail> Preferences> Accounts> and at the bottom left hand corner, click the + button.

From there on, just fill in the necessary info (should be readily available on your email accounts' sites).

As long as you have all the accounts enabled, then you'll never need to really do anything to swap between them. :)
