I keep getting mixed answers, can anyone tell me if after building the 2.0.1 firmware and option restoring, can I get all the apps I had on my phone from 2.0 back on my phone? What about my contacts, music etc.. if I can, how do I do it? (Create the back up and then back it up from it.)

They should still exist in iTunes, so you should be all set.
Then again not having them is the cost of jailborking your iPhone.
